So recently I’ve been trying to spend more time baking at home, instead of spending all those bog-eyed hours staring at my laptop. Don’t get me wrong, I love running my blog and my online dress boutique, but do you ever feel like all you do is stare into the eyes of your laptop, watching the hours whizz by?
I’ve decided that Sundays are going to become my new baking days, and you may have already spotted a few baking related posts over the past few weeks. My new favourite is my healthy Banana, Peanut Butter and Dark Chocolate Muffins… mmmmm.
You’re probably think: how is any dessert with chocolate in classed as healthy? OK so ‘healthy’ might be too adventurous, but if you bake with dark chocolate which is over 70%, or use cacao nibs, it’s actually a lot better for you, reducing the amount of added sugars. Along with this, I’ve been blending together a number of what I like to class as super-foods to create a yummy, good-for you biscuit.
Introducing my Banana, Oat, Peanut Butter and Dark Chocolate Cookies….
1.5 cups of oats
1/2 cup coconut oil
1/2 cup crunchy peanut butter
2 tablespoon flaxseed
1/4 bag chopped hazelnuts
3 mashed bananas
Half a bar of 70% dark chocolate
See- no added sugars, no syrups, honey or sweeteners. But there’s nothing wring with added 2 tablespoons of honey or syrup if you wanted to add that little sweet kick!
This couldn’t be easier! Just simply mix together all of the above, and grease a baking tray. Spoon out the mixture into equal size biscuit pieces – or bake similar to a flapjack – and place in a pre-heating oven for 20 minutes.
The dark chocolate will be gooey and the oat mixture a little chewy when first out of the oven. Ideally wait 10 minutes for them to cool a little, and enjoy warm, deliciously healthy cookies!
You might be wondering why I don’t just go all out and bake with the usual ingredients, i.e. flour, sugar, butter etc. And in all honesty, I know you can’t beat a good stack of cookies made with the above, with that sugary crunch and soft flour texture. But to me, it’s so important to try incorporate superfoods into my diet at any given opportunity. So when I feel like my sweet tooth is crying out, it’s easy to up a tasty treat combining numerous foods which are classed as nutritious and vital for the body.
Some of those are mentioned above in my ingredients list, like flaxseed, coconut oil and bananas. They aren’t really ingredients I can really consume on their own, meaning I much prefer to mix them up and create a yummy treat, gaining a good dose of nutrition too.
